How to Make

Method:

  1. Preheat the oven to 190°C and line a baking tray with baking paper.
  2. Prepare your fortunes by writing them quite small on a piece of paper and then cut them out.
  3. In a large bowl mix together, the egg whites and sugar with an electric whisk on high speed for around 2 minutes.
  4. Then whip in the vanilla extract, almond extract, water and melted butter, but ensure the butter has cooled before mixing it in. Mix until all ingredients are incorporated and then mix the flour into the mixture until it disappears.
  5. With a tablespoon measure, spoon the batter onto the baking paper and spread it into a circle, roughly 3 inches wide. Ensure the batter is spread thin.
  6. I recommend only baking 2-3 fortune cookies at a time, as they set very quickly, and you won’t be able to shape them. Bake for around 6-8 minutes or until the edges slightly brown.
  7. When each batch is baked, remove from oven and quickly flip the circle over. Then fold the fortune cookie in half, into a semi-circle. This is when you can slip your fortune into the cookie. Place your semicircle onto the edge of a cup and quickly fold the ends down to shape it into a fortune cookie shape.
  8. Next place the cookie into a muffin tin so it holds its shape.
  9. Repeat this with the remaining batter and enjoy!

Top Tip

When you spread the cookies out, do them thinner than feels comfortable. This gives you a lovely ‘snap’.
